Large new Fast Eddy’s to feature popular hot sandwich chain

Earl of Sandwich is coming to Fast Eddy’s. The sandwich chain with a smattering of high-profile locations will soon have a restaurant on Eagle Rd. in Meridian.

The new Fast Eddy’s is a sprawling campus with food, fuel and car care. Signage on the building and in renderings shows an Earl of Sandwich outlet. The chain currently has 30 locations around the United States, including at Downtown Disney in Anaheim, CA and Disney Springs at the Walt Disney World Resort in Florida.

The restaurant concept gives top billing to its hot sandwiches. Options include tuna melt, roast beef & horseradish, and Hawaiian BBQ. Most locations serve both breakfast and lunch items.

The chain’s co-founder purports holds the British noble title Earl of Sandwich. A previous titleholder, the Fourth Earl of Sandwich popularized the idea of ingredients between bread and put his noble title on it. The other founder is Robert Earl who launched the Planet Hollywood chain. The two brands are both part of the Earl Enterprises umbrella.

Fast Eddy’s owner Steve Eddy did not return a call for comment, nor did a representative for Earl Enterprises.

Site plans filed with the City of Meridian show a drive-through on the convenience and restaurant building, but it isn’t clear if the window is for Earl of Sandwich or other offerings.

Fast Eddy’s first phase nearing completion

A lube and car wash building is nearing completion as well as fuel pumps, and other car care facilities. The car wash will have two lanes and numerous self serve vacuum stalls. Construction work on the separate convenience store building is still underway.

[Not so fast: Fast Eddy’s to rise again (again)]

This will be Fast Eddy’s second return to the Treasure Valley after twice building up and selling a chain of fuel and convenience stores and later selling them to Jackson’s Food Stores of Meridian.
