Ketchum brewery, distillery at work on big expansion with statewide plans

Idaho AGC Going Up

The Warfield at the corner of Main St. and Sun Valley Rd in Ketchum will soon up a large expansion.

The brewery and distillery opened in 2016 in the building storied for its history as The Roosevelt and several other restaurants and bars.

To expand, construction crews tore down the former home of KB’s burrito restaurant last year. In the months since, a large new 3-story building started to spring up. The expansion will include 12,000 square feet of space and a new 30 barrel brewing operation. Large 2-story windows facing Main St. will highlight the building and provide a view of the facilities.

The project includes a large 4,500 square foot basement with a storage area and bottling room.

The first floor holds extensive room for brewing and distilling facilities, as well as a small tasting room along the front of the building. Most of the existing restaurant will remain as is, with a new passageway between the old and new buildings, and an added walk-in cooler.

Upstairs, a new indoor/outdoor terrace space will sit adjacent to the current rooftop restaurant. Much of the rest of the second floor is open to the production area below.

The third floor has two residential units with an outdoor terrace along the back side.

Amping up production

The facility will allow The Warfield to expand its operations to accommodate wholesale across the state.

In April, the company hired Kiernan Burns – who last brewed in New Zealand, to oversee the brewery.

“We’ve got some really big things in the works, and I’m excited to see where we are able to take the Warfield brand over the next few years,” Burns said.
