Two Boise classics come together for Meridian restaurant, ice cream shop

Two long-standing Boise institutions will soon come together for a new joint in Meridian.

Downtown Boise’s long-standing Capri Restaurant and West Boise’s Delsa’s Ice Cream will headline a co-branded restaurant at 1407 W. McMillan Rd. in Meridian near Linder Rd.

Permits indicate a new 3,728 square foot restaurant and ice cream shop. The buildout will include a commercial kitchen, ice cream area, and seating area.

Owner Nick West owns both the Delsa’s and Capri Restaurant concepts – which both date to the 1960s. The Capri, at 25th and Fairview, serves up breakfast and lunch favorites in a 50s-diner setting. You might also know it as the restaurant with the rooster on its sign.

Delsa’s, on Ustick Rd. in Boise, operates seasonally with ice cream, shakes, and other dessert treats.

The new restaurant will slot into the new Shops at Sawtooth Village project under construction on the corner. It will join Loose Screw Beer Co. and other new tenants in the retail center.
