A permit filed with the City of Boise indicates a new Korean BBQ restuarant could open seen in Downtown Boise.
The Korean BBQ fast-casual joint already operates two locations in Idaho – in Meridian and in Nampa. They also run a food truck.
Now, a permit filing with the City of Boise shows they hope to open a new store on Boise’s restaurant row in the former Thomas Hammer space. Hammer closed earlier this year.
Described as “Korean BBQ in a cup,” Cupbop offers dishes like the B Bop – with Korean-style BBQ beef, rice, cabbage and noodles. Other options include the Mandoo Bop – a Korean pot sticker with rice and noodles, and Ugly Bop – Korean-style fried chicken.
Cupbop started in Utah before expanding to Idaho in 2019.
Cupbop brings an additional fast-casual to the Restaurant Row area of Boise’s 8th Street. Most of the eateries on the strip focus on sitdown service, with a few exceptions like Piehole and Wild Root.
