Chipotle eyes new location in southeast Boise

National fast-casual Mexican chain Chipotle Mexican Grill hopes to expand its presence in Boise.

Representatives for the chain asked the City of Boise to approve a new 2,325 square foot restaurant at the corner of Boise Ave. and Apple St. The building would go up in the parking lot of the Eastgate Shopping Center, home to D&B Supply, Rite Aid and other retailers.

The pad site sits up against the corner of the property across from Timberline High School. Jack in the Box previously proposed a drive-thru restaurant on the site, but the project never materialized.

Chipotle currently operates four locations in the Boise area.

Chipotle is asking for a variance to reduce the number of required parking spaces from 100 to 70.

A permit hearing for a conditional use permit for the project is set for Boise’s Planning & Zoning Commission at 6pm on Monday, February 1st at Boise City Hall, or remotely via Zoom.
