Owner Jim Balis has confirmed that the a second location will open at 2475 S Apple St. in SE Boise.
In fact, Balis said that because the business focuses on takeout, they have done well despite the pandemic – well enough that he is eyeing a third location in Eagle.
New location features & rebrand
However, Balis is currently focusing on the Apple St. location where there is no opening date set but he hopes to have a soft opening two weeks from today.
“Just with the setbacks and staffing it is very challenging now,” he said. ”Despite unemployment… it’s just a challenge to hire right now at the hourly level, almost in any market, and especially here it seems where demand’s particularly high.”
Balis says they want to offer outdoor seating at the new location but are still figuring out details. The restaurant will also have their own delivery system.
The restaurant that serves New York-style pizza, light Italian and sushi opened in the early 2000s and was originally named, Lulu’s Fine Pizza. Later Lulu’s Pizza, then Lulu’s pizza and Sushi after a neighboring market closed and reopened sushi sales in Lulus (later Balis bought them out). Now, Lulu’s is once again undergoing a name change and rebrand.
“We brought back Lulu’s Fine Pizza and Sushi,” Balis said. “Because we believe the name is a better reflection or representation of our product, and then we changed logo to make it a bit more contemporary. And the design of the new location is also a departure from what it looks like in Bogus.”
Eventually, Balis says they will remodel the 2594 N Bogus Basin Rd. location to better complement the new spot.
Ultimately, Balis said they are “excited” to open an additional restaurant location.
