A tapas restaurant is coming to Eagle.
Chef Steve Topple’s restaurant Stefano’s will move into the old Grit American Cuisine near Eagle Rd. and State St.
“I’m super excited about it,” Topple said. “This is some fun fresh flavors for Eagle. There are some really, really great restaurants popping up everywhere, all across the Treasure Valley.”
The restaurant’s menu will have Mediterranean-style tapas with Spanish, Greek, and Italian flavors all at an affordable price.
“And so the concept is to be kind of small plates,” he said. “And trying to keep everything under $20 is the as the ultimate goal. Keep it affordable.”
Wine, beer, more
Stefano’s would have a drink menu with local beers and wine inspired by the food flavors.
“I’m super excited about the wines,” Topple said. “I’ve been researching a lot about Mediterranean-style wine. We have an Israeli wine, we have Lebanese wine, and some really nice Greek wine. So, should be kind of fun with that concept and then using some
Topple said he’s still trying to figure out last-minute touches.
“I’m still trying to kind of figure out if lunch is what I’m going to do,” he said. “Or if it’s going to be just dinner only, but I kind of want to do lunch because I think it’s a lot of businesses around the area. Right now, it depends on staffing really that’s the biggest issue.”
Topple was originally planning to open mid-September he now said that may have been too ‘optimistic.’
“I think I’ll push back a little bit on that but I’m trying to get it going here as quick as I can,” he said.
Topple,is the owner of Ragazza Di Buffalo in Donnelly and Caldwell, Ragazza Di Lago in McCall, and the co-owner of Blue Moose.
