Pizza, cocktails and mocktails; new restaurant opens in Star


A new locally-owned restaurant just opened in Star that offers more options for people who don’t drink alcohol (and for people that do).

Described as an upscale restaurant with an unpretentious environment, PROOF Craft Pizza and Cocktails opened on November 1 at 9759 W State Street in Star. The menu has a little something for everyone, including a variety of pizzas, a list of salads, sandwiches, seafood, steak, and a lot more. PROOF will also soon offer brunch.

For those that drink, PROOF has a full bar offering craft cocktails, beer, and wine. And for those who don’t partake, there’s a separate alcohol-free cocktail list.

Bryan Forcina, who graduated from the San Francisco Culinary Academy, is the owner and has lots of experience in the local restaurant scene. Forcina opened the Meridian Yard House restaurant as their Executive Kitchen Manager before serving as Executive Chef at Ruth’s Chris Boise location. He was also the former General Manager at Eureka in downtown Boise.

“PROOF takes inspiration from the world around us, sourcing what we can from farmers, ranchers, distillers, wine makers, brewers and artisans in and around the Treasure Valley. We firmly believe in community and will deliver an experience you are sure to remember,” PROOF’s website states.
