Sushi food truck heads to bricks & mortar spot by Boise mall

A Boise sushi food truck is set to make the leap to bricks and mortar.

Sushi Bros. launched its truck last summer with a menu of nigiri, temaki, maki and sashimi. The truck has been a fixture on Fairview Ave., and the new Green Acres food truck park along the Boise Greenbelt.

In recent months, crews started work on a full restaurant buildout at 997 N. Milwaukee St. That’s a portion of the former Zurcher’s location behind the Arby’s drive-thru. Zurchers relocated in the same shopping center in 2016 – and the Goldfish swim school took up the bulk of the old Zurcher’s spot, leaving a small restaurant site behind.

The floorplan submitted with the city of Boise shows a large central sushi bar area, with additional seating and a kitchen/prep area. The plan shows seating for about 52 customers.

Sushi Bros calls itself an “authentic Micronesian Sushi food truck.” The extensive menu includes rolls like the Hot Night (tempura shrimp and spicy tuna), Bogus (crystal shrimp with tuna and crab), and the Meridian (Salmon, Jalapeno, Cream Cheese – deep-fried).

Work to finish buildout on the restaurant space is underway.
